Inalbi Farm to the mill, the processing stages of their olives are carefully followed by the Grifoni family and his collaborators.
The constant search for quality is present in all phases of production of our extra virgin olive oil, olives from the manual collection yet, with their pressed within 12 hours.
The olives are harvested in the day it weighed and pressed overnight. Just arrived at the mill are cleaned with a ventilation system to remove all foreign objects (stones, twigs, leaves, etc..) followed by thorough washing. Then begins the real work: grinding through a hammer you get a paste that is left to "knead" cold for about thirty minutes. Once this phase is passed to centrifugation through which the oil is separated from other components. Here is that our oil is ready to be enjoyed on your tables.
