The farm "Inalbi" is located on a hill near Florence and has a total area of 50 hectares including 20 hectares of Chianti Colli Fiorentini DOCG, IGT and table wine, 25 and 5 hectares of olive groves and wooded acres.
Since 1970 our farm "Inalbi" produces Chianti DOCG, Vin Santo and White Wine in its 20 hectares of vines made of Sangiovese, Canaiolo, Trebbiano, Malvasia, and an excellent extra virgin olive oil from its 7000 high quality olives: frantoio, Leccino, Pendolino and Moraiolo. The accuracy of the methods of collection (still done by hand) until bottling guarantee the excellent quality of our products. The constant search for quality is present in all phases of production of our extra virgin olive oil. A special mention goes to our oil that was selected in 2008 by the Chamber of Commerce, as among the best in the province of Florence, acidity 0.15%, n. peroxides 5.7 (meq02/kg), tocopherols and biophenols 550 mg / kg.
Inalbi Farm to the mill, the processing stages of their olives are carefully followed by the Grifoni family and his collaborators. The constant search for quality is present in all phases of production of our extra virgin olive oil, olives from the manual collection yet, with their pressed within 12 hours. The olives are harvested in the day it weighed and pressed overnight. Just arrived at the mill are cleaned with a ventilation system to remove all foreign objects (stones, twigs, leaves, etc..) followed by thorough washing. Then begins the real work: grinding through a hammer you get a paste that is left to "knead" cold for about thirty minutes. Once this phase is passed to centrifugation through which the oil is separated from other components. Here is that our oil is ready to be enjoyed on your tables.
Is selected from the vineyards and harvest the best grapes. The wine is aged in oak barrels. Is dark red and has a typical taste well balanced, well paired with dishes such as roast meat or game birds.
Our white wine, fine and elegant aroma, the taste is dry with a good aftertaste, appreciate it fresh with dishes of white meat or fish.
Our Vin Santo comes from white grapes Trebbiano and Malvasia, left to dry until the month of December. The dried grape juice is fermented in oak barrels for at least 4 years. The taste is sweet and dry and can be enjoyed with homemade cakes or pastry quality.
Grape pomace from our company, grappa is produced that is born of a particular distillation, Calderini made of copper and aged for 3 years in oak barrels. It 'a grappa strong but refined with great balance of body and a unique taste.
